Luxurious Saffron Pear Dessert

Easily prepared, refreshing but opulent at the same time. The best way to top up a wonderful meal with a highlight at the end.  

Ingredients:

  • 3 Kaiser pears (medium ripe)
  • 10 pods of Cardamom
  • 1 cinnamon stick
  • 2 tsp of rose water (optional)
  • 2 glasses of white wine
  • 2 glasses of water
  • 1 coffee cup of sugar
  • 1 capsule of Zafferia saffron

To garnish (optional):

  • Granola of pistachio and walnuts
  • Dried rose petals
  • Vanilla ice cream
  1. Put the water, white wine, rose water, saffron, other spices, and sugar into a saucepan. Stir gently and bring the sweetened liquid to a light boil.
  2. Peel the pears, remove the bottom, leaving and stalk and the rest of the fruit intact, and put them in the saucepan. If the liquid still doesn't cover the pears, add water.
  3. Bring the liquid to a boil and immediately lower the heat. Cover them with the lid and cook for 35-45 minutes or until a knife cuts easily into the pears.
  4. Let them cool in the flavored water, so that they will take on all the aromas. When they’re cooled down, cut the pears in half lengthwise and remove the center.
  5. To prepare the syrup, keep a cup of liquid in the saucepan, raise the heat and let the liquid reduce for about 20 minutes until it reaches a syrup-like density.
  6. Pour the syrup over the pears. You decide whether to serve them cold or hot. You can serve it with ice cream and use pistachio and walnut granola with dried rose petals as garnish.
