Sweet Sweet Saffron Pudding

Saffron Pudding | Budino di Zafferano

Looking for an easy, delicious, and wonderfully yellow saffron desert? This 2-layered classic is one of our favorites (make sure you check out both layers before preparing the ingredients).

First, we prepare the Bottom Layer.

Ingredients

  • 3 cups of milk
  • 1 glass of water
  • 3 spoons of rose water
  • 100 g of starch
  • 1 cup of sugar
  • 50 g of butter
  • 10 pieces of cardamom

 

  1. Mix water and starch well in a bowl.
  2. Pour two cups of milk and all the sugar into a saucepan. Put it on a very gentle heat and stir the mixture until the sugar is completely dissolved.
  3. Add the mix of water and starch gradually and keep stirring. Since the milk is warm and the starch is absorbed very quickly, stir the mixture quickly and evenly. Note that the pan shouldn’t get too hot.
  4. Now, add the butter and the mortar-grinded cardamom. Mix the ingredients well with a hand mixer so that they don’t become lumpy. You can also use cardamom powder, but fresh cardamom grains make it much tastier.
  5. Stir until the mixture is smooth At this stage, we add the remaining measure of milk and rose water and let is become thick again.

Now you can pour it in a large bowl, or several small ones, depending how you prefer to serve the dish, leaving enough headspace for the second layer. Let it cool for couple of hours until it’s elastically solid.

 

Now comes the Top Layer.

Ingredients

  • 2 glasses of milk
  • 1 glass of water
  • 2,5 spoons of sugar
  • 3,5 spoons of rice flour
  • 2 spoons of rose water
  • 10 pieces of cardamom
  • 1-2 capsules of powder saffron
  • 5-10 threads of saffron

 

  1. First, dissolve the capsule(s) of the Zafferia saffron in the slightly boiling water in a small pot.
  2. In a second mid-sized pot, add the sugar and rice flour to the milk and mix it well. When it becomes a homogeneous mix put it on the stove on medium heat and add the cardamom, rose water and saffron water. Let it cook for 15-20 min while stirring it evenly and continuously.
  3. When the mix starts to thicken, turn off the stove, let it cool and add it as a second level to the bowl(s) you have used before.

Let it all cool down in the fridge another couple of hours and garnish with pistachio crumbs and saffron threads. Enjoy!
